The science around fat and diet is confusing to sort through. And, unfortunately, all studies are not created equal and good scientists often come to polar opposite conclusions, making it difficult for the average person to make sense of it all.

It's amazing how much "research" is based around financial incentives rather than a focus on health. We must learn to listen to our bodies. Once we become aware, we recognize that most of these oils such as canola oil do not settle well in our systems. Live mindfully my friends.

I always appreciate Dr. Hyman's style. He doesn't try to overtalk, and he does not interrupt. Nor does he talk fast to show how smart he is. Dr. Hyman is a professional of the first order!

this is why I cant eat at dunkin donuts or many other food chains. Within an hour, I feel like crap from these "cooking oils". Literally these places are risky for my health and I can feel my liver reacting if I eat any of it!!!

You did not actually explain why refined oils are bad... Actually, refining of oils is done to remove certain properties of the oil and extend its shelf life. Of course it removes some nutrients, but it's not rancid, it actually prevents it from becoming rancid to a higher extent than a non-refined oil. Especially the PUFAS are refined these are naturally more prone to rancidity and oxidation.
