Kubernetes w/Kafka - retaining information between restarts [C#/SQLServer/MongoDB]

I am close, but I want to get the ability to restart the system and have it come back up with Kafka and data intact every time. So, we continue to learn about how kubernetes stateful sets work, and is it a stateful set thing vs a me not saving the right data thing.
