Subnautica has an extensive modding community, with many huge mods being currently available such as The Silence leviathan, The Bloop Leviathan, and De-Extinction. There are also mods in development currently, such as the Red Plague and the Return of the Ancients mod, featuring the Gargantuan Leviathan.

(Not many leviathan mods are that good so one of the only mods done right has to be considerably high up.)

Blisterback: 6
(It's just a whole load of blurry colours on a lump; it looks unrendered. Would go 7 but we need to hold that for Bloop my (not so) beloved.)

Shelled Monstrosity: 4
(They just make anything a leviathan mod, don't they? Anyway a flying ammonite isn't that horrible of an idea.)

Blaza: 5
(Suffers from the same issue as the Blisterback, though obviously not to the same extent. That of course being how unrendered it looks. Its animations also make certain parts of its body get really stiff, which shouldn't happen for an eel/worm creature.)

Silence: 3
(About as close to original Subnautica leviathan territory as you can get. It's still a ways away from that, but it could work on someone who's never really played the game.)

Deep Bloop: 7
(Just because Reapers and Sea Dragons are big and scary and aggressive, doesn't mean that's all there is to the leviathans.)

Void Garg: 1
(It was actually something that existed in the planet the game's set on at one point, which helps it fit into the game better. It also doesn't suffer from what makes all other leviathan mods - with all due respect to their creators - suck. Those being weird textures that don't fit in with the realism of the game, and stiff animations.)
