Hexagonal test is wrong one... I tested in dates syrup.. it also show the same hexagonal..

I think this test is only based on viscosity of liquid. the liquid with higher viscosity will be proved to be pure honey even if it's just a dark chocolate :)

what happen to the honey after you caramelize it? after it turn back to its origin does it becomes hard? because i tried it and when it cools down it become a little hard but not hard as sugar
