Soufflé recipe from Sally's Baking Addiction. Visit her website for full, more thorough instruction!
Yields 4 6oz soufflés. (we definitely crammed them into 3 and that's why they came out under done lmaooooo)
INGREDIENTS
Soufflé Batter:
- 4 Tbsp unsalted butter, cut into 4 Tbsp sized pieces
- 4 oz semi-sweet chocolate bar, coarsely chopped
- 3 large eggs, separated
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1/8 tsp cream of tartar
- 3 Tbsp granulated sugar
Prepping the Ramekins:
- 1 Tbsp unsalted butter
- 4 tsp granulated sugar
DIRECTIONS
Preheat oven to 400F. Melt 4 tbsp butter and all chocolate together in microwave in 20 sec intervals, or over a double boiler on the stove. Allow to cool slightly before mixing in egg yolks, vanilla extract, and salt. Set aside. In a medium mixing bowl beat together egg whites and cream of tartar on high speed until you see soft peaks. Add in sugar 1 tbsp at a time, beat until stiff glossy peaks form. Slowly and carefully fold egg white mixture into chocolate. Brush 4 ramekins with 1 tbsp of butter, coat each with 1 tsp sugar and rotate to evenly distribute sugar. Spoon batter into ramekins, smooth out the tops. Put the ramekins on a baking sheet, adjust oven temp to 375, and bake for 13-14 mins on bottom rack. DON'T OPEN THE DOOR UNTIL THEY ARE DONE!!!! IF YOU WANT TO LOOK AT THEM TURN ON THE LIGHT BUT DO. NOT. OPEN. THE. OVEN. DOOR. !!!!!!!!!
Top soufflés with whatever you'd like: whipped cream, powdered sugar, raspberries, whatever floats your boat.
