I just got a decent gravel bike. hadn't even heard of gravel bikes until my road bike was stolen in London after having that for 5 years. I love it. Running 29ers 2.25 with Schwalbe Racing Ralph tyres. Super low roll resistance, bit lighter than it's counterpart the Smart Sam.

Wiser they get heavier unless uou spend a lot

It really depends. The section width is one consideration. Carcass construction and tread pattern are huge factors.

Compacted earth that sees rain? Mild knobbies of modest width. Single ply 60 tpi or 120 tpi.

Thick gravel? Wide and chunky to give support after airing down. Maybe 60 tpi x2.

Cinder? File pattern, with middling pressure. 120 tpi.

Urban and suburban paths with a mix of tarmac and cinder? City tire with higher (but not racing tire) pressure. 120 tpi.

Lots of overlap here and room for rider discretion. If you can swing a spare set of wheels and tires, everything below mountain biking is do-able on the same bike.

They always test on the same bike that has a clearance suitable for the largest tire. They should control for this by changing the fork too so that it’s always just large enough for each of the tires.
