444 mile Natchez Trace Parkway is great scenic peaceful drive. No mountains but nice in its own right.

Seems like you like the Southwest a lot but you should trying getting up to northwest a lot of beautiful stuff in states like Wyoming, Montana, Idaho, Oregon, and Washington. Still a lot of open places in these states as well.
