How To Make DELICIOUS BLACK-EYED PEAS Cooked with a Ham Hock - NO SOAK METHOD

Today I'm going to show you how I make SOUTHERN STYLE BLACK-EYED PEAS. Grab your ingredients and cook along with me. THIS IS THE NO SOAK METHOD - RECIPE BELOW
Ingredients you'll need:
• 1 - 16oz Bag Dried Black-Eyed Peas - Any Brand Will Do
• 1 - Fresh Ham Hock
• 1 - Tablespoon Pepper
• 1-2 - Teaspoons Salt
Instructions:
• Pour 16oz bag of black-eyed peas in a colander
• Go through your peas "Dry Picking" to remove any rocks, deformed or shriveled peas that were missed during the packaging process
• Once you have dry picked your peas, you will want to rinse them. While rinsing the peas, this is your chance to go through them once more to see if you missed any of the bad ones
• Pour cleaned and picked peas into a pot
• Clean ham hock with water to remove any grit or anything else remaining
• Fill the pot with water
• Remove anything that may be floating out of the water - These peas are the remainder of the bad ones that weren't taken out in the beginning
• Add your salt & pepper
• Turn your stove eye on high to medium high until the water in the pot begins to boil
• Once the water is boiling, turn down the temperature to a medium/low
• Add a lid to the pot once the water is boiling at the desired temperature
• After one hour, check your beans to see if any water is needed. If not, come back every 30 - 60 minutes to check - You will more than likely need to add water at some point during the cooking process. Stirring beans frequently.
• Add water if needed - Not too much as there is a point in the cooking process when the beans no longer absorbs the water - I like my peas with some soup gravy for cornbread dipping
• Continue to check on your peas every 30 minutes until the desired consistency is achieved
• Take the meat off the ham hock and leave in the peas once beans are completely cooked- REMOVE ONLY THE BONE
• Total cook time can range from 3 - 4 hours depending on your preference of bean constancy
• Serve when ready
• Refrigerate leftovers
