Interesting, it seems that the measure is not affected by the switching of the PWM. One factor could be the sampling rate much lower than PWM switching frequency (it could be a 100-180 KHz module), so eventual interference is located out of the band of measure. Another factor could be the low current used by the sensor that is well managed by the capacitors of the PWM. Thanks for this video!

switchmode PS can work fine all you need is an additional inductor and cap on the output to clean it up and lower the ripple . much higher efficiency

I'm sorry to say this but that waveform doesn't look good. I think the sample rate of the transducer is too slow. Sometimes you have to spend some money to get a good waveform
