To those people who have commented that this is loubia polo not Estamboli polo, this IS estamboli polo for us Shirazis. What we in Shiraz call estamboli polo you Tehranis (and some other cities) call Loubia polo. For us Shirazis, louba polo is a totally different dish. Loubia polo is Sheeved polo :)

Hi, is the rice partially cooked before you put it in at 2mins, or only soaked?
