This recipe is our entry video to Hugh's 3 Good Things Challenge. We hope we win the prize, but regardless, this recipe is definitely a winner in the kitchen!

Ingredients:

2 beetroot
1 cup walnuts
1 cup feta cheese
1 small clove garlic
1 small handful mint
3 tbsp oil
pepper to season

so the beets are raw when you put them in the food processor?

Yup :) You could of course cook them, then blend the whole mixture, but when you've got fresh sweet beets there's really no need
