Chicken Biryani is a savory chicken and rice dish that includes layers of chicken, rice, and aromatics that are steamed together. The bottom layer of rice absorbs all the chicken juices as it cooks, giving it a tender texture and rich flavor, while the top layer of rice turns out white and fluffy. Buried in the Biryani, you’ll find whole cuts of succulent chicken bursting with flavor from the potent array of spices, herbs, and aromatics it’s marinated in.
Although widely associated with Indian cuisine, Chicken Biryani is a dish that has spread across a wide swath of South Asia, reaching as far west as Iraq and as far east as Indonesia. The vast geographical area Biryani calls home has resulted in a wide variety of preparations and ingredients; however, it is typically prepared by layering seasoned chicken with rice and aromatics and steaming them together.

Ingredients
Jeera 1 tsp
Pepper 1 tablespoon
Cloves -8 nos
Cardamom-4 nos
Star anise-1
Big cardamom -1 nos
Cinnamon stick- 2 inch
Flower-1/2

Roast this ingredients without oil and grind it into a powder.

Chicken-1kg
Ginger garlic paste-2tbs
Red chili powder- 1/2 tsp
Lemon juice-2tbs
Turmeric powder-1/4th spoon
curd-1/4th cup
Green chili - 2 nos
Oil -2 tsp
Biryani masala-1 1/2 tbs
Salt-as per taste
Clean the chicken pieces and marinate it with the above dry Masala and keep it for at least 4 hours. After 4 hours you can add pudina and coriander leaves and mix it well.
Onion- 4 medium (cut into slices and fry it in oil until it's brown and crispy)

Basmati Rice -1cup
(Soak the rice in water for half an hour and then after half an hour boil the rice with bit of salt ,bae leaves and cloves).
NOTE- (see that you boil the rice only to 80% don't overcook it)

Method
Now take a deep utensil grease it with oil at the bottom add the marinated chicken into it and then add half of the fried onions. Now put layer of cooked rice and again spread the fried onions, once it's done at the sides of the utensils as shown in the video .Now place a plate and seal the borders with silver foil. Keep the flame medium and cook it for 5 minutes,then take old tava place it on the gas and on that place the utensil. NOTE.The flame should be low and cook it for 45 minutes. (Place hot water utensil on top of the plate).

Once 45 minutes is completed slowly open it and mix it with a fork or spoon see that the rice doesn't break.
