you can preserve lemons in salt (they are delicious! very salty, of course lol.) it would be interesting to try preserving watermelons the same way -- the lemon flavor is enhanced, even though the texture is completely changed. enhanced watermelon could be quite nice!

You should try to pickle them. Pickle watermelons are good. And it's awesome side dish to cold vodka.

I had proper pickled watermelon before and its really good
U need to submerge it in water
Also u need to use some vinegar aswell
