Ghapama is Armenian rice stuffed pumpkin and its AMAZING!

A Traditional Ghapama recipe usually has mixed nuts and dried fruit. This recipe is savory version made with lamb. It's an Armenian dish served during Fall and Winter.
2 small pumpkins or one large.
2 cups rice
1 onion diced
1 bell pepper diced
1 jalapeno diced
4 garlic cloves
15 cherry tomatoes halved
1lb ground lamb
aleppo pepper
cumin
salt
pepper
Cut pumpkins an remove seeds, rub with olive oil and salt &pepper. place on sheet tray
Add rice and 2.5 cups of water to a pot and simmer for 10 min. Place it in a bowl. It will be Par cooked at this point.
Saute onions, peppers, garlic and tomatoes in a pot for 3-5 min place it in the rice bowl
Add 1lb ground lamb to pot and brown for 2-3min staring constantly session with salt pepper and aleppo pepper, place in rice bowl.
Add rice mixture to pumpkin. cover with lid.
place in preheated oven at 350 fro 1.5 - 2 hours.
when you can pierce with toothpick easily its done.
Remove and eat warm!
