I was craving something rich and ridiculous, so I decided on eggs benedict. I bring back the pork rinds and eggs for the little formation of a carnivore english muffin, or carnivore bread. It's wild how the texture really is soft and bread like. The flavor is obviously a little egg-y, but I know that if you're on a Carnivore or Keto diet, you'll be able to look past that ;) This was super tasty and actually really easy to make.

7 eggs, 3 separated
1 Cup Ground Pork Rinds
1 Oz Prosciutto
3 Tbsp Butter, melted
1 Tsp Lemon Juice
¼ Tsp Baking Powder
Take your 3 egg yolks that you separated and place into a heat safe bowl. Bring a pot of water to a simmer. Place the heat safe bowl over the pot of simmering water and begin to whisk. Do this until the egg yolks have thickened and have lightened in color. Slowly pour in your melted butter until all of it has been incorporated. Pull from the heat and add your lemon juice and season to taste. Set aside.
Place your pork rinds and 2 eggs into a mixing bowl. Mix well using a fork or spoon. Add ¼ Tsp baking powder and mix in. Place a non-stick pan over medium low heat. Add olive oil or butter to the pan. Place a ring mold in the pan and put 2-3 Tbsp of the mixture in the mold. Cook for 5-6 minutes per side or until a springy texture has been achieved.
Bring a pan of water to a simmer. Crack 2 eggs into a separate bowl. Pour these eggs into the simmering water. Cook for 3-4 minutes and flip. Once flipped, cook for an additional 1-2 minutes. Let drain on a paper towel.
Cut your english muffin in half. Place prosciutto on top. Next add your poached eggs. Finally, drizzle over your hollandaise. Serve hot.
