Love the fact that they have updated the GUI. After blender and the success of 2.8, a revamped UI UX experience shows it can really help.
Hopefully, more companies take note.(looking at you 3dsMax, with your UI from Windows 95)

As much as i like 3d coat since i bought it 2 years ago it's always an eternal beta, i never saw a truly stable version.

Why would I want to use this over any other modelling program?

The program has its pluses, but the pluses end there. If the developers at least sometimes RUN their programs AFTER compilation, and not run all the bugs on users, the attitude would be much better towards the program and the developers. And so, instead of working on stability, they AGAIN are engaged in unnecessary interface changes.
