Chicken Tacos Only Take 15-20 Minutes

Ingredients -

Taco Seasoning -

1 1/2 tsp (4g) - Onion Powder
1 1/2 tsp (4g) - Garlic Powder
1 1/2 tsp (4g) - Paprika
1 1/2 tsp (4g) - Ground Cumin
1 tsp (2g) - Dried Oregano
1/2 tsp (0.5g) - Red Chilli Powder
Salt & Ground White Pepper

Chicken & Onion -

2 Tbsp (40ml) - Olive Oil
1 - Brown (Yellow) Onion, Thinly Sliced
2 - Chicken Breast, Thinly Sliced Strips
Salt & Pepper

Tortillas & Fillings -

6-12 - Small Corn or Flour Tortillas
1-2 - Fresh Limes
1/2 - Red Onion, Finely Diced
1-2 Avocados, Mashed
1 - 2 - Tomatoes, Diced
Coriander (Cilantro)

Method -

In a bowl, add all the taco seasoning and mix to combine.

In a second bowl, add the sliced onion and 1 Tbsp of the taco seasoning, mix well.

In a third bowl, add the thinly sliced chicken and add the remaining taco seasoning. Mix well.

Place a large pan over medium high heat, add in 1 tbsp of olive oil and saute the onions for 3-4 minutes, mixing regularly until golden and slightly translucent. Add in the garlic and cook for 1 minute. Remove and set aside.

In the same pan back over medium high heat. Add the remaining olive oil and add the chicken. Fry the chicken for 4-5 minutes or until golden and just cooked through. Add in the onions and heat for 1 minute. Remove for the heat.

Toast or warm the tortillas in a pan or microwave. Lay down the mashed avocado, top with the fajita mix, tomato, red onion, coriander (cilantro) and a squeeze of fresh lime. Dig in.

Now I love the simple and clean recipe, but no way that takes ~15mins, run it, no cuts!!

Flour tortillas? Why? True tacos are made with soft corn tortillas! Flour tortillas are bland and lack of texture…
Guacamole has a bit of garlic and coriander. Same for the pico de gallo which is a mixed salad of the diced tomatoes, onion (with lime juice) and coriander, all mixed together resembling the Mexican flag! For the chicken, a marinade using chile ancho, pasilla, morita or chipotle, with tatemised onions and tomatoes/peppers would be more suitable as it gives a smoky flavour…no fried onions needed! Don’t know where/when the UK got the idea that chicken with fried onions (and peppers) is a suitable filling for tacos! British fajitas are an insult to Mexican cuisine! Please learn how to make proper tacos and you’ll see the difference, and you’ll not eat ever again fajitas or these type of bland tacos! Ahh, and please, never hard tortillas! If you want the corn tortillas hard, they should be left open flat and fried in oil which then you can top up with ingredients of your choice to form a “tostada” (a toasted open taco, usually topped up with prawn ceviche)
