Chicken Tacos Only Take 15-20 Minutes

Ingredients -
Taco Seasoning -
1 1/2 tsp (4g) - Onion Powder
1 1/2 tsp (4g) - Garlic Powder
1 1/2 tsp (4g) - Paprika
1 1/2 tsp (4g) - Ground Cumin
1 tsp (2g) - Dried Oregano
1/2 tsp (0.5g) - Red Chilli Powder
Salt & Ground White Pepper
Chicken & Onion -
2 Tbsp (40ml) - Olive Oil
1 - Brown (Yellow) Onion, Thinly Sliced
2 - Chicken Breast, Thinly Sliced Strips
Salt & Pepper
Tortillas & Fillings -
6-12 - Small Corn or Flour Tortillas
1-2 - Fresh Limes
1/2 - Red Onion, Finely Diced
1-2 Avocados, Mashed
1 - 2 - Tomatoes, Diced
Coriander (Cilantro)
Method -
In a bowl, add all the taco seasoning and mix to combine.
In a second bowl, add the sliced onion and 1 Tbsp of the taco seasoning, mix well.
In a third bowl, add the thinly sliced chicken and add the remaining taco seasoning. Mix well.
Place a large pan over medium high heat, add in 1 tbsp of olive oil and saute the onions for 3-4 minutes, mixing regularly until golden and slightly translucent. Add in the garlic and cook for 1 minute. Remove and set aside.
In the same pan back over medium high heat. Add the remaining olive oil and add the chicken. Fry the chicken for 4-5 minutes or until golden and just cooked through. Add in the onions and heat for 1 minute. Remove for the heat.
Toast or warm the tortillas in a pan or microwave. Lay down the mashed avocado, top with the fajita mix, tomato, red onion, coriander (cilantro) and a squeeze of fresh lime. Dig in.
