The reasons for the jump in versions from 5.x to 8.0
Version 5.0: October 2005 (cursors, stored procedures, triggers, views, XA transactions)
Version 5.1: 27 November 2008 (event scheduler, partitioning, plugin API, row-based replication, server log tables) SUN bought them. It had been more than 3 years and MySQL 6's main feature, UNICODE, bombed so the other features of 6 were rolled into 5.1.
Version 5.5: December 2010 (default InnoDB and refinements) This is the year that Oracle acquired them when the purchased SUN, and a swath of developers left to start MariaDB.
Version 5.6: February 2013 (NoSQL APIs and InnoDB full text searches but picked up performance issues caused by writes being faster than reads) Version 7, which never went GA but heavily used by cell phone companies, was incorporated.
Version 5.7: October 2015 (Native JSON type and fixed the performance issues caused by 5.6) It has been 10 years since Versiohn 5 came out.
Version 8.0: April 2018 As mentioned, security management and syntax were brought more up to date, which can cause issues. However, other than that, there are more changes between 5.6 and 5.7 than 5.7 and 8.0. A lot of jitters have happened over the past 18 years, including acquisition by Oracle and key players leaving and others replacing them. It is likely that things will progress at a more steady pace now that major architecture and team shuffles are behind us.

This is not that different than the major PHP instability between PHP 5.2 and 7. PHP 5.3 was simply a cheeky release of PHP 6 minus UNICODE and 5.4 added to the non-backwards compatible strategy by removing what had been deprecated. PHP 7 brings not only the UNICODE, but drops the MySQL functions while retaining only the MySQLi and newer technologies.
