Hello Everyone, I hope you're having a good day!

Again I have skipped forward slightly for this recipe, just so I don't have to make 4 fish dishes in a row. So, I will return to make the fish tacos and crispy bass (The last one is already filmed, just need to edit), but for this video we are making Pepper Poppers!

I've never actually made these before, but did some searching around to see how others do it and whipped up my own recipe. It seemed to have worked out well, but I'm interested to know what you all think! Personally I like the heat that the chipotle paste brings, and the double coating of panko breadcrumbs adds a nice contrast of texture to the creamy cheese😋

🧾INGREDIENTS🧾
🔹 6 Red and 6 Green Peppers (Jalapeño are more common, but use what you like and adjust quantity based on size)
🔹 125g Cream Cheese
🔹 150g Mozzarella
🔹 2 tsp Chipotle Paste
🔹 1/2 tsp Paprika
🔹 1/2 tsp Garlic Powder
🔹 A Few Cranks of Black Pepper
🔹 1/4 tsp Salt
🔹 1 Cup Cornflour
🔹 2 x Eggs (more may be needed if your peppers are large and you do multiple coats)
🔹 3 Cups Breadcrumbs (more may be needed if your peppers are large and you do multiple coats)
🔹 Cocktail Sticks

👨‍🍳METHOD👩‍🍳
🔸 Cut the tops off the peppers and scoop out the seeds.
🔸 In a large bowl, mix together the cream cheese, chipotle paste, paprika, garlic powder, black pepper and salt. Tear the mozzarella into small pieces and stir into the mixture, along with half a cup of breadcrumbs.
🔸 Spoon the cheese mix into the peppers, ensuring that you push it all the way down to the bottom.
🔸 Place the tops back on the peppers and secure with cocktail sticks.
🔸 Coat each pepper in cornflour, then beaten egg and finally the breadcrumbs. Set the peppers to the side, then after 5 minutes, coat in egg and breadcrumbs again.
🔸 Fry the peppers in 170°C vegetable oil for 2-3 minutes until golden.
🔸 Remove the cocktail sticks and enjoy!

Oh man these look amazing! I’ve never seen them made like this with the top cut off and then replaced, haha! Love the golden crust you were able to achieve on this! They look so good! 😋

Don't be so modest, there was a small cheese pull when you took the top off. Looks better than the jalapeno poppers I've gotten in pubs before.

I'm from the midwest in the united states, we use cheddar cheese instead of mozz...and if one is feeling very fancy, we wrap it up with bacon. It's delicious!!

do you need to use the chipotle paste or can you use something else?
