BBQ Lasagna
RECIPE COURTESY OF HOBO'S BBQ
Level: Intermediate
Total: 1 hr
Active: 30 min
Yield: 16 servings

Ingredients

20 sheets lasagna noodles
Cooking spray
1 quart barbecue sauce
4 quarts shredded sharp Cheddar-Monterey Jack cheese mix
2 pounds pulled pork
2 pounds smoked chicken, chopped
2 pounds Cajun sausage, cooked and chopped

Directions

Special equipment: a 4-inch-deep full-size hotel pan

Preheat the oven to 400 degrees F.

Boil the lasagna noodles for 9 minutes in a pot of salted water. When cooked, drain and transfer to an ice bath for 1 minute. Lay out the noodles on a large cookie sheet and spray with cooking spray.
In a 4-inch-deep full-size hotel pan, spread a layer of the barbecue sauce over the bottom. Arrange 5 slightly overlapping noodles to fully cover the bottom of the dish. Then spread a layer of pulled pork, followed by 5 ounces of the barbecue sauce and 1 quart of cheese. Continue layering with 5 more noodles, followed by a layer of smoked chicken, 5 ounces of barbecue sauce and 1 quart of cheese. Then create another layer with 5 more noodles, followed by a layer of Cajun sausage, 5 ounces of barbecue sauce and 1 quart of cheese. Finish with the remaining noodles, the rest of the barbecue sauce and the last quart of cheese.

Bake, uncovered, until cooked through, about 30 minutes.

Thank you everybody for the kind words I only read about 10 reviews and they were all positive. I want to learn how to reply to each persons comment so I’m trying. The restaurant was called Let’s Grub BBQ when Holly passed away I change the name to HoBo’s BBQ, HoBo was her initials and nickname. The HB on the lasagna has a HB for her initials. I remember asking them not to use and shots of me crying because I though I looked like a baby, believe it or not those clips are of me crying the least, during the shoot it was pouring out because I knew Holly would be so proud.

The man named his restaurant after his late wife...that's a whole lot of love right there. If that were me, I'd do the same thing.

Sir: I think your wife has a lot to be proud of. No matter how much we love this clip I know it can't come close to how much love I know you've got in you. Thank you for sharing your craft with us! I was going to California this year for my brother's wedding... naturally Covid19 put that on hold (they'll be married on paper at least). When we properly celebrate in the future and I go to see him: I plan to make it a whole vacation. I will add visiting your restaurant to my things to do on the trip - and all because of this clip. I wish you and your whole crew good health and the very best of luck! Can't wait to see it.

I saw that mans emotion the entire time he was on camera. You loved your wife and you two loved food. Those are tears of passion, love and remembrance. Be proud of those tears because you are real. You put your emotion out there on your sleeve for the whole world and your delicious looking food shows that. Your wife was standing right there in that kitchen with you dude. I wish you the best of luck and if I'm ever in the area I will most definitely be stopping in.
