BLW Dietitian's favorite way to use up leftovers (RECIPE)

Fritters are my favorite way to make foods safe for babies when I’m feeling stuck on what to do with an ingredient. It’s not safe for early eaters to eat raw foods like lettuce or uncooked spinach. But dark green leafy vegetables are packed with nutrition, not to mention some very unique flavor profiles your baby can try! Greens like Swiss chard contain iron; and although the iron in plant-based foods is not as well absorbed by the body as is iron from animal foods - these are still nutritious and wholesome foods that your baby can learn to self-feed! In this recipe, you can use the Swiss chard stems to pickle or chop and include in a stir-fry for yourself!
Ingredients
* 2 bunches Swiss chard (1lb total)
* ½ Italian parsley, chopped
* ¼ cup dill, chopped
* 1 ½ cup panko
* 2 cloves garlic, chopped
* 2 large eggs
* ¼ cup shredded cheese
* ¼ teaspoon pepper
* Oil for frying
Instructions
1. Separate the leaves from the stems of the Swiss chard and roughly chop the leaves; discard or save the stems for a different use.
2. Bring a large pot of water to a boil, add chopped chard leaves and simmer, uncovered for 5 minutes.
3. Remove the chard and squeeze out the excess water.
4. Place the cooked chard and remaining ingredients (excluding oil) in a food processor and pulse until well blended. Option to remove part for baby and add salt to the remaining mixture for the rest of the family.
5. Heat the oil in a pan over medium-high heat
6. When the oil is hot & shimmering, spoon 1 heaping tablespoon of the mixture for each fritter into the pan. Press down gently to flatten.
7. Cook 1-2 minutes on each side until golden brown. Transfer to a baking sheet lined with a paper towel to drain.
