I am heavily influenced by my Cajun friends and their cooking. We have been frying turkeys for over 20 years and are excited to bring you our simple method. In this recipe we are going to be using our Brine & Holy Voodoo seasoning. Feel free to use your favorite products and make this recipe your own. The Holy Voodoo does have a little sugar in it which will yield a slightly darker turkey. Trust us when we say it's delicious. Enjoy!

I'm a fry guy too! I fried about 8 turkeys and this looks Awesome!!! Too bad my family's not a Cajun one or I would be cookin this up for thanksgiving. Thanks for the upload.

I must say that the voodoo seasoning is very good but I've used it twice now on a fried turkey and it needs to be noted that the second and third ingredient in this seasoning is sugar and brown sugar. Deep frying with sugar on it gets this bird very very dark it almost looks burnt. I think maybe this one is not a go-to for frying if people aren't used to frying food like this if the oil is just a little bit too hot and you could seriously burn your bird with this seasoning. I would say that the oil probably needs to be at about 350 or 340 when you drop the bird and then 300 to 325 while it's frying if you're 350 plus while a turkey fries for 45 minutes that seasoning is going to burn.

I started frying turkeys long before it was popular or mainstream.

After you’ve 24 hour brined, inject, and then let it rest in the refrigerator for 48 hours. Light coat of olive oil then add any seasoning you want.

Fry at 350 for 3.5 mins a pound.

You’ve never had a more crispy skin. That 48 hour fridge dry is where it’s at. I don’t doubt your turkey is amazing, everything you do is, but try the 48 hour dry and fry.

I done this exactly how the video shows and the turkey was amazing. Not one small piece of turkey left for leftovers. It was amazingly juicy and tasty. I bought the package deal from Academy that has the brine and voodoo seasoning. My only problem is now my wife wants to add this turkey to our monthly meal plan lol.

Not sure if you’ll see this a year later but I’m considering use this rub and brine this year for my fried turkey. How spicy does it make the turkey? Too hot to tolerate? We like a little spice, but not where our noses are running or anything like that haha
