Chicken Fried Rice With Shrimp Sauce is easy to make. Salty flavor of the shrimp sauce really brings out the flavor in the fried rice. This is still a tasty dish if you can't find any shrimp sauce.

CHICKEN FRIED RICE WITH SHRIMP SAUCE

3 to 4 oz. sliced fresh chicken
3 tablespoons chopped onions
3 tablespoons chopped green onions
11/2 to 1 teaspoon shrimp sauce or paste
3 to 4 cups cooked rice
1/2 teaspoon dark soy sauce
1/2 teaspoon light soy sauce
2 tablespoons cooking oil
1/2 cup water (optional)

Cut fresh chicken into small pieces. You can blanch chicken in boiling water before cutting up if you like. Otherwise, just wash chicken before cutting up. Chop onions and green onions. Rice is cooked from the day before. Leftover rice is excellent for fried rice.

Preheat a pan at medium heat and add 2 tablespoons cooking oil. Add chicken, onions and rice to the pan. Use spatula to break up rice chunks. Stir fry rice for about a minute. Add dark soy sauce and light soy sauce into the rice and continue to stir fry. Add shrimp sauce to fry rice and mix well with the rice. Shrimp sauce is very salty, so probably add only 1/2 to 1 teaspoon. Add chopped green onions. Turn heat up to high and stir fry rice briefly before serving. You can make this fried rice without the shrimp sauce if you like. Enjoy!

Delicious Dan!  Your mom is such a great cook!  I need to have her give me lessons on using chop sticks!  I always drop my food and I watch your mom eat rice with them!  She's a pro!!!  ;-)

I actually make fried rice very similar to the way your mom makes it.  Next time I'll add a little of the shrimp sauce to my fried rice.  This looks really, really good and simple to make!  Thanks!

Looks great! I also love the texture of leftover rice from the day before. The onions will parade the aroma of the shrimps very nicely. Yummy, quick, handy and affordable. I like this recipe. I can easily get exacly the same shrimp sauce in my local chinese grocery store. As always a huge thumb-up and I'm excited for your upcoming cooking videos. You do great job, Dan. it's a typical recipe with many variations... both mom and I do restaurant style with an egg cracked over the rice and stirring vigorously to keep it mixed and thoroughly coated minus the shrimp sauce for me, thanks. I use cured spicy tofu instead of the shrimp sauce, but this is just a preference in tastes.

Love it! My mom always makes fried rice with shrimp paste! It's definitely an acquired taste, but when used sparingly (a little goes a long way), it can turn dishes into masterpieces! :) I love shrimp paste; it is a little smelly, but eh... whatever tastes good! :D
