Chicken Fried Rice With Shrimp Sauce is easy to make. Salty flavor of the shrimp sauce really brings out the flavor in the fried rice. This is still a tasty dish if you can't find any shrimp sauce.

CHICKEN FRIED RICE WITH SHRIMP SAUCE
3 to 4 oz. sliced fresh chicken
3 tablespoons chopped onions
3 tablespoons chopped green onions
11/2 to 1 teaspoon shrimp sauce or paste
3 to 4 cups cooked rice
1/2 teaspoon dark soy sauce
1/2 teaspoon light soy sauce
2 tablespoons cooking oil
1/2 cup water (optional)
Cut fresh chicken into small pieces. You can blanch chicken in boiling water before cutting up if you like. Otherwise, just wash chicken before cutting up. Chop onions and green onions. Rice is cooked from the day before. Leftover rice is excellent for fried rice.
Preheat a pan at medium heat and add 2 tablespoons cooking oil. Add chicken, onions and rice to the pan. Use spatula to break up rice chunks. Stir fry rice for about a minute. Add dark soy sauce and light soy sauce into the rice and continue to stir fry. Add shrimp sauce to fry rice and mix well with the rice. Shrimp sauce is very salty, so probably add only 1/2 to 1 teaspoon. Add chopped green onions. Turn heat up to high and stir fry rice briefly before serving. You can make this fried rice without the shrimp sauce if you like. Enjoy!
