In this video I show you how to make a very famous winter dish from Pakistan. The curry is made from almonds, coconut and fennel seed. It is a very basic curry and is eaten like a soup with bread or chapatti, it's great for the winter.

Ingredients:
1/3 Cup Olive Oil
1 Medium Onion - Finely Sliced
1 Tbsp Ginger xu0026 Garlic Paste or Frozen Cubes
1 Small Tomato – Finely Chopped
Salt to Taste (Recipe Used 1 Tsp)
½ Tsp Black Pepper
1 Tbsp Chill Mix
1 Bay leaf
1 Black Cardamom
1 Cinnamon Bark (Small Sized)
1 Clove
3 Dried Amla (Dried gooseberry)
2 Green Chillies
1 Tsp Cumin Seeds
1 Tsp Tomato Puree
3 Tbsps Ground Almonds
1 Tbsp Desiccated Coconut
1 ½ Tsp Coriander Powder
1 Tsp Fennel Powder (Saunf)
1 ½ Tsp Garam Masala
1.2 Litres Boiled Water

Method:
1. Heat the oil in a pan and add in the sliced onions. Brown the onions off on a high heat making sure to stir continuously.
2. Once brown add in the tomatoes and ginger and garlic. Turn the heat down and cook for 2 mins until the tomatoes have softened.
3. Add in the salt and pepper and chilli powder, you can add a little water at this point to avoid the spices burning.
clove, dried amla, green chillies, cumin seeds and tomato puree. Cook for 1 min to infuse the flavour of the whole spices.
5. After 1 min add in the ground almonds, desiccated coconut, coriander powder, fennel powder and half of the garam masala. Mix really well and cook for 1 min stirring continuously.
6. Add in half the water and mix to break down any lumps, then add in the rest of the water. Bring the soup to the boil and cook on a high heat for 10 mins.
7. After 10 mins reduce the heat and simmer for 40 -60 mins with the lid on.
8. Finish the soup with garam masala and serve with bread or chapatti.

You can cook the soup for longer or shorter time depending on the consistency you require.
