I’m so excited to try this recipe! I feel like I’m one of the few asians that just doesn’t like the traditional mungbean/red bean/egg yolk fillings.

As Chinese, yes you can eat them right away after baking, but it can harden up and be crunchy, which is not what a mooncake texture is, so you need to keep it in airtight container and let it sit there for at least 3 days, then it’ll soften itself!

When I hear those crunch, I was like … no way… crunchy mooncakes? 😅

So we have Americanized a classic Chinese pastry. Wish you would not call it monocle because abuse they have some symbolism to the culture.
