Reminds me about the time I tried to make mead in a non sanitized container... Ended up making a small ecosystem and some yucky stuff.

we would usually add in a small percentage of pears to make cider sweeter, you should try that one out. those sweeteners often have a nasty afertaste

fun fact, xylitol is actually an alcohol already which is why it can't be digested by the yeast. that may also be part of the reason you didn't get a good bottle fermentation as they may have had their growth inhibited.

Hey Johnny what yeasts are you using? Could be that you're using a yeast with too high of an alcohol tolerance

Xylitol causes blood clots, I wouldn’t recommend using it. Add a tsp of simple syrup to your glass if you want it sweetend

Cider in the UK is referring to alcohol right? I was confused why you needed yeast and fermentation for a cider since in the US we call our alcoholic ciders "hard ciders"

In my limited experience if you wait too long after secondary (conditioning) to naturally carbonate in the bottle, your yeastie boys may not wake up to carbonate that bad boy.
