The same principle of rotation keeping the honey from spilling works for gathering up globs of molten glass when glass blowing. Molten glass and honey have a surprisingly similar viscosity.

I actually JUST got done making fir tree honey myself (in this case it has no honey though, it's technically just a sugar syrup).

I boil them for an hour, let them rest overnight, strain the water, then add sugar before boiling it again for an hour, then boil it down until I get the right consistency. Interestingly it goes from a milky white colour to a deep orange/red towards the end, which is really cool to see.

I also add a few ginger slices for a bit and some lime juice to cut through the sweetness a little. It can only be done once a year during the right time when the young fir needles sprout, so anytime I make it it's a special occasion.

Some of it I give away, some of it I keep, and some of it I turn into liquor with some vodka and some extra lime juice and an extra ingredient, such as cloves or star anis or cinnamon. You can really go wild with the stuff. The taste is hard to describe, it's very unique for sure. If anyone wants to try it, I highly recommend putting in the hours of gathering the needles and boiling the stuff. 500g for about 2 kilos of sugar and 2 liters of water is my go to. I ended up with a little over 2 liters of honey.
