This cured meat and white bean stew must be one of Spain’s most famous dishes, yet it is one of the most simplistic. It’s full of big, bold flavors but the key to this recipe is the ingredients, which need to be from Asturias (otherwise it won’t be the same). If you ever cross paths with an Asturiano, he will tell you so in no uncertain terms. Fabes are fat, white beans that cook beautifully without disintegrating – if you really can’t get hold of them you could use large lima beans or butter beans – but don’t say that I said so…

Я попробовал Фабаду в Хихоне, в маленьком ресторанчике в старой части города. Быдо довольно жарко, но дело шло к вечеру и понемногу прохлада опускалась на город. Пока нам готовили суп, мы плотно занялись сидром, и к моменту подачи этого чудного супа были в довольно размякшем состоянии. Сменившая жару прохлада настойчиво советовала нам съесть чего-нибудь горячего, и вот наконец нам принесли Фабаду. Это было грандиозно, размер порции потрясал воображение, аромат шедший от блюда торопил. Это потрясающе сытный суп. Вечер, прохлада, вкусный суп и легкий сидр сделали тот день незабываемым.

Hey Omar. Thanks for this. I cooked it and luckily got all the right ingredients online. INCREDIBLE. The first time I had this was at a well known place in Mallorca. I went to the kitchen and the chef gave me the recipe (keeping back the secrets). THIS IS BETTER. Thanks.

The best Spanish beans i ever had are Michirones, ate that in Cartagena, Murcia! The dish was home made, by a lady in her 70's, may God bless her soul! It was absolutely delicious!

I personally prefer a thicker gravy, so I take some of the water and some of the beans, blend them and put them back into the pan.
