This Chocolate Zucchini Cake tastes just like Devils food cake. It rich, moist chocolatey and packs in two cups of veggies!

CHOCOLATE ZUCCHINI SNACK CAKE RECIPE:
2 eggs
1 tbsp. vanilla extract
1/2 cup coconut sugar (or brown sugar)
1/4 cup unsweetened apple sauce
1 cup white whole wheat flour
1/2 cup unsweetened cocoa powder
1.5 tsp baking soda
1/2 tsp. salt
2 cups shredded zucchini (about 11 ounces or 2 medium sized zucchini
1/2 cup mini chocolate chips + 1/4 cup to sprinkle on

I made this tonight for the family I work for as an au pair and even the little girl (6yo) loved it even though she HATES veggies like nothing else! I did add a bit more sugar and a tiny bit of milk (dough was a bit too dry) but these are seriously the best brownies (snack cake) I have ever had! So moist and almost tasted like a thicker chocolate mouse! Can only recommend! (I also did not use a mixer and whisked everything by hand). Thank you for this recipe!

Hi dani! I made my first zucchini chocolate bread in my life thanks to your vid. I was always interested in incorporating zucchini for sweets but thought it would be weird. Wow! It turned out AMAZING! Moist and rich, no detection of any veggie whatsoever! I used dark chocolate unsweetened powder, stevia, 1 smashed banana, half coconut flour/half white all purpose flour, because my pantry didnt have your mentioned ingredients. It was the best chocate cake ever! Thank u! New subscriber here

Absolutely tremendous recipe Dani! I used the one and a half tablespoons of stevia per a previous post. I also then used a quarter cup coconut flour and one egg to replace the white flour. Delicious, delicious, delicious! ❤️

I’ve lost count of how many times i’ve made this super cake. Nobody believes a huge portion of it is made up of zucchini! I’ve used both green and yellow zucchini and both taste amazing.

i primarily used this recipe and found it too dry ...i added 1/3 cup avocado oil and 1/4 cup almond milk plus walnut pieces and it came out amazing a great cook and i use your recipes a lot live on your oatmeal muffins but i blend cheeries .raspberries, almond milk and eggs add walnuts and blueberries and oats

Instead of peeling the zuchini you could also blend it. And put 1 cup of uncooked spinach blended. Extra greens. The chocolate covers the taste

Thank you for a delicious nutritious low calorie snack cake that I can share with my friends! I substituted the sugar for a half a Cup of stevia and I omitted the chocolate chips because I am sugar free (and I don't really like the sugar free ones but I might try some 100% grated chocolate on top with a bit of powdered sugar swerve).... I also added a tablespoon of instant coffee which gives it a mocha flavor that I love. I'm thinking of frosting with some avocado chocolate frosting sugar free of course lol. Just another wonderful recipe with a lot of inspiration from you Dani--and thank you so much!

This recipe was great! I didn't have any applesauce so I used coconut oil instead and regular white flour in place of the flour. Great texture and taste!

I love chocolate zucchini cakes and bars Dani. I made one once and my daughter actually ate it, she didn't know it had zucchini in it as I grated it more finely and the cocoa powder just masks the taste. Yours looks delicious I'll be making this. Thanks Hun
