This dish will be a big hit because let’s face it, who doesn’t enjoy crispy fried prawns in sweet and spicy sauce? This recipe is an amalgamation of ingredients frequently found in Thai cuisine with mayonnaise (yes mayonnaise!), which lends the dish its unique spicy creaminess. Perfect served hot and with a piping hot bowl of rice!

Instructions
Marinade the prawns
In a bowl, mix together oyster sauce, egg, cornstarch and a pinch of salt.
In a bigger bowl, mix the prawns with the marinadeand set aside for 15 mins.

Deep fry prawns
Heat up oil for deep-frying in a pot. Deep fry the marinated prawns until goldenand drain on kitchen paper.

Cook the sauce
In a separate pan, heat 1 tbsp oil and sauté sliced lemongrass, sliced ginger bud and sliced chili padi until fragrant.
Add tom yam paste, water, honey, chili sauce, sugar, vinegar and tomato sauce.
Season with salt and stir well
| Adjust the level of spice in this dish by adding or removing chili padi

Mix prawns in sauce
Add in prawns and mix thoroughly
Stir in mayonnaise and lime leaves
Remove from heat and stir in mayonnaise and sliced kaffir lime leaves.
Garnish and Serve!
Serve hot garnish with finely slice kaffir lime leaves.

What a mouthwatering dish!
It is perfect for all types of occasion, even in an everyday meal this dish will stand out. It will surely let you eat more rice than you think you can eat. Very convenient to cook cause it just take a short period of time to prepare this dish but will let you to sit on your chair and enjoy in your dining table for a long period of time. Compared to all the other recipes, this is one of the unique dishes that you wont see on everyday basis. Which makes it a great dish to be cooked on CNY. Its simple ingredient and quick preparations makes it a hassle free food to prepare for guests. I myself would love to try this back home and for that thank you afn !!

1 kg fresh prawns (cleaned with legs cut off)
2 stalks lemongrass (finely sliced)
1 torch ginger bud (finely sliced)
3 chili padi (sliced)
3 kaffir lime leaves (finely sliced,+3 for garnish)
1½ tbsp oyster sauce
2 tbsp tom yam paste
½ cup canned tomato sauce
1 egg (beaten)
1½ tbsp mayonnaise
3 tbsp chili sauce
2 tbsp white vinegar
3 tbsp cornstarch
1 tsp honey
¼ cup water
salt (to taste)
oil for deep frying + 1 tbsp oil
1 tsp sugar
