I agree for the most part but i think particularly in Etsy the ones with more detailed text or graphics do well. Ofc that's because you can showcase the design with your own mockups.

I am one of those type of designers as you mentioned (as an illustrator for the majority of my life) who isn’t a web builder/designer in the slightest. In the recent past I didn’t understand why my art had not translated well with more work and detail that I had put into it (I’ve been a RedBubble designer for 3 years now). For the past year I been even working as a spray artist with the use of stencils (lots of contrasting colours, values, and flat edges needed for a crisp design). Yet, even then in the physical market I notice the pieces I paint and work on longer and in detail that are essentially more “busy” and “carefully detailed” don’t tend to sell as quickly, as most likely the people who walk by and see the large collection of options to choose from often chose the more simple and easier to make designs. I even recently had this specific conversation with my wife asking her what she observes from the sidelines of customers walking by and her observations as well.
Like you said just as with pay-on-demand websites, there are a large amount of options that your eyes are looking at as a whole subconsciously. In this case, your eyes will more than often focus on the designs with the least amount of work and stress as possible as a natural way of relaxing you eyes and essentially your brain.

It is valid! if you start as just a text base designer, eventually you will Start learning ways to add art in the design process!

I know why people add stroke ...many times so it would go with different colours, like RB would bring out some weird products and they are white even when u designed for black. I know I can select default products etc. A stroke is sometimes easier lol. Not talking abt this specific rainbow one. I think it was intentional and had a different idea behind. I think it would have worked better with a more playful font, overall it was still readable. Not sure about that niche though. Like people really buy those stuff??

Less is always more. I think sometimes where I struggle is trying to get a design that will work across the different t-shirt colour variations. Like that t-rex design wouldn't work against a white tee because of the word "DAYS" is in white. Maybe the answer is to only design for black t-shirts....
