AUSH / ASH - Afghan noodle soup

INGREDIENTS

Ground beef sauce

Oil - for cooking meat
1 - medium/large onion
1 lb ground beef
5-6 cloves of garlic (crushed)
Coriander - 1 tablespoon
Cumin - 1/2 tablespoon
Turmeric - 1/2 tsp
Black pepper - 1 tsp
Salt - to taste
Tomato paste - 4 tablespoons
Tomato sauce - 6 oz
Water

Noodles + garlic yogurt sauce

Water
Fresh noodles - 1lb
15 oz can kidney beans
15 oz can garbanzo beans
Labne 16oz
Garlic 4-5 cloves
Dried mint for garnish
Hot red pepper - optional

INSTRUCTIONS

1. Start out by making your meat sauce.
Sauté an onion until golden. Then add in your ground beef + brown. Then add in garlic + spices. Cook for a couple minutes, then add in tomato paste + sauce - cook for a couple more minutes. Then add water + cover lid & cook on low.

2. Boil the water for your noodles then add in your beans. Once cooked through add in your noodles.

3. Make your yogurt sauce by combining labne, garlic, salt & water. Keep adding water until yogurt sauce is thick - but not runny.

4. Once noodles are cooked, turn off the heat. Let it sit for a few minutes.

5. Next add in your yogurt sauce - mix.

6. Lastly, top with the ground beef, plenty of dried mint & hot pepper (optional).

7. Serve warm & enjoy!
