Pumpkin pie crumble
Whisk together:
1 can pumpkin 15 oz
1 12oz can evaporated milk
1c sugar
2 1/2 t pumpkin spice
3 eggs
Pour into greased 9x13 pan

Topping
1c rolled oats
1c flour
1/2c brown sugar
1 stick cold butter chopped
Crumble/ mix with hands or mixer

Sprinkle crumble over top pumpkin mixture
350. 45 mins

You can make vegan pumpkin pie that doesn't require eggs, thickened with cornstarch. Lots of recipes online.

Rustic? Oh yeah! I can do rustic! Because, Jinne, just like you, I am MESSY! That looks like the kind of recipe I would make for a carry-in meal at church! My son loves pumpkin pie, so I wouldn't dare skip making a pie for Thanksgiving! I even make him pumpkin pie for his birthday in April!😂 There’s just something comforting about the creamy custard texture of desserts like your pumpkin crumble, or pumpkin pie!
