I was there when Tobey caught the food on the tray. They used rat trap glue on his hand to the tray, and the same glue on the bottoms of the food. Two people on two ladders dropped the food onto the tray. That's me in the background, right side at 00:08 in black dickies and green fleece pullover. I don't recall it taking that 156 takes, but it was a very long day. We also shot the tray flying across the cafeteria on the same day using a pulley system.

The scene in which Peter Parker catches Mary Jane's lunch on the tray involved no CGI. With the help of a sticky substance to keep the tray planted on his hand, Tobey Maguire eventually (after many takes) performed the stunt exactly as seen.

Clarification: Yes, this was performed without CGI. NO, Toby did not do it purely on his own. In the commentary it is explained that his hand was stuck to the tray with a special glue, and there was a mechanical rig involved (that they didn't fully explain). The rig likely dropped the food from just off camera so that it would land level instead of flipping upside-down.
