Hot Wings Inspired by Malcom Reed's "Malcom Bomb"

For me, I love getting inspiration from different recipes that may not necessarily be from you normal recipe or food. This recipe was inspired by Malcom Reed's "Malcom Bomb" and let me tell you, it turned out. a fantastic hot wing!!!!

***What You Need***
4 Pounds of Fresh Chicken Wings
32oz of your Favorite Adult Beverage
Plenty of Your Favorite Hot Sauce
A Bag of Limes
Your Favorite Spicy Rub

First thing for this recipe is to get the wings in the beer brine. I used a bowl and a large meat bag and placed about 4 pounds of wings in the bag. I then added 1/2 cup of Hot Rub, 4 limes juiced, 32 oz of Miller Lite, and once bottle of Killer Hogs Hot Sauce. You can adjust the liquid amount in order to make sure the wings are completely covered. Place them in the fridge over night or 12-24 hours.

Once the wings have been in the brine, I removed them and placed on a wire rack and allowed them to dry a little. I then applied a good layer of Hot Rub on the wings.

While the Hot Rub was doing its magic, I got my PK 360 fired up and set it up for 2 zone cooking. This will allow me to basically reverse sear the wings and get a great crust. You can cook this recipe on any grill or smoker and make this recipe your own.

I placed the wings on the cool side of the PK. This side was running about 275-300 at the grate. This will be the perfect temp to get the wings tender and crispy.

While the wings were cooking, we can make the sauce. In a medium sized mixing bowl, added about 8 oz of Hot Sauce, the juice from one lime, and about a tablespoon of hot rub. Get it mixed up and you are good to go.

Once the wings hit almost 200 degrees internal, it is time to sauce them. I tossed them in the sauce and placed them over the coals to crispy them up. Once the skin got where I wanted it, they went back in the sauce and to the cutting board.

Now for the best part.... sprinkle lime zest over the top for an awesome flavor and a pop of color. This was something that really shined while eating these wings!!

That’s all Miller Lite is good for. Barely...Knew when I saw his grill I’d finish watching. It’s been used not all right out the box pretty. Looks tasty. Gonna have to give this a try.
