I love this! The Mexican restaurant that I work for in the Upper Peninsula of Michigan does this with Mexican food! We have Korean BBQ Burritos and Tacos, we’ve had Tikki Masala Chicken items, Nashville Hot Chicken items, Cuban Sandwich Quesadillas, etc. So I can definitely bet that these Quesadillas that he’s got are also great, because they have similar ideas to my work!

I promise you haven’t had a Birria Quesadilla until you’ve had the ones at Taqueria Taco Express in Grand Prairie, Texas. Most would overlook it as it’s linked to a corner store but has its separate side for business. Literally the best quesadillas I’ve ever eaten.
