I know EXACTLY what you are talking about with events; I do two events a year (and now adding a third) where we do 500K+ per event (price per person is between 10 and 15K...and people KNOW if they buy early they will save a lot of money...yet the majority wait until closer to the event. to book and pay the higher rate (and we NEVER discount or go back on the rate or offer BOGO, etc). Great stuff!
