Mutton Biryani Recipe

Masala Ingredients:

1. Star anise - 1
2. Mace - 1
3. Cinnamon - 1
4. Green Cardamom - 3
5. Cloves - 4
6. Cumin seeds - 1 tsp
7. Fennel seeds - 1/2 tsp
8. Pepper corns - 1/2 tsp
9. Coriander seeds - 2 tsp
10. Bay leaf - 1


Main Ingredients:

1. Oil - 3 tbsp
2. Ghee - 2 tbsp
3. Onions - 1 big sized, chopped
4. Tomato - 1 large
5. Ginger garlic paste - 2 tbsp
6. Mint and Coriander leaves paste - a handful (grind and add after ginger garlic paste)
7. Chilli powder - 1 1/2 tbsp
8. Briyani masala
9. Boneless mutton pieces
10. Water - as needed
11. Lemon Juice - 1/2
12. Basmati Rice - 5 small glasses (approximately 2 cups)

Instructions (Pressure Cooker):

1. Dry roast the masala ingredients until fragrant. Grind into a fine powder and set aside.
2. Heat 2 tablespoons of oil and 1 tablespoon of ghee in the pressure cooker. Add chopped onions and sauté until golden brown.
3. Add ginger garlic paste and sauté for another minute.
4. Add mutton pieces and cook until browned.
5. Add ground masala powder, chilli powder, and Briyani masala. Mix well.
6. Add water as needed to cover the mutton and cook for 4-5 whistles or until the mutton is tender.
7. Rinse Basmati rice and soak for 20-30 minutes. Drain and set aside.
8. Add the soaked rice to the pressure cooker with the mutton mixture.
9. Add 1 cup of water and bring to a boil.
10. Close the lid and cook for 2 whistles or until the rice is cooked and fluffy.
11. Stir in lemon juice and chopped mint and coriander leaves. Serve hot and enjoy!

Note: Adjust the amount of water according to your pressure cooker's requirements.
