I just made this cheese! Oh my goodness, it tastes good! The texture is awesome as is, and I will also age whatever we dont eat asap. Lol. This is the best cheese replacement recipe. I think using the golden beats was best, as it really adds to the cheese flavor. Weird, i know, but this works! Thanks so much for this recipe. You are a role model!

Also the coconut milk that you used is full fat or light ?

Do you have to use tamarind powder or can we use the paste or water? We usually make a tamarind water that is used in Indian chutneys.
