Also, what kind of salt do you use the night before ? Is it the same salt as day of cooking to further season??

My favourite is Medium and Medium Well.
Medium number 1 and Medium Well number 2.
They are very rare too, not so common.
Medium Rare and Well Done are very common.
Medium to me tastes the best.
And plus injected with Butter or Bone Marrow.

I don't have a meat probe thermometer that I can put in the oven. Given that, how long will I cook in the oven?

Looks AMAZING what happens if I cook a tomahawk or a prime rib roast just a tad bit longer will it dry it out?? I love when you cut & the juices are flowing at the same time
