When one Pork Chop isn’t quite enough, I like to ask the butcher to go big and give me some Double Cut Bone In Pork Chops. Add in some seasoning and some smoke and you’ve got a super-sized porky meal..

Pork Seasoning Ingredients

2 tsp Kosher Salt
½ stp Coarsely Ground Black Pepper
1 tsp Dried Rosemary
1 tsp Smoked Paprika
¼ tsp Chili Powder
3-4 TBSP Olive Oil

I agree with you Ry, they sure looked like no sear was required. They looked perfection without a the sear. Nice tip on the double cut!

Looks great Ry and I have a chop on the Weber now. I’m I’m interested in trying som peach wood. How would you say the flavor differs from apple wood?

That's an Iowa cut pork chop, anywhere between 1 1/4 to 1 1/2
Inch thickness pork steaks are great like that as well.

Most of the grocery stores in my town got rid of the people who cut meat, it's all shipped in precut these days. Gotta take a special trip to an actual butcher.

i think I never mentioned this, but I really appreciate having temp in celsius. definitely a recipe that I will try soon. this reminds me these incredible pork chops from Manchester Arms at Atlanta GA
