For most, 4K is optimum. After that, the noticeable difference begins to diminish unless you sit very close to the screen.

8k setting in YouTube looms better, but not because of more pixels, but because of more data. Most people have never seen lossless 720p for example, and would ve surprised to see how mich better than YouTube's 1080p it can look when there's movement. Try lossless 1080p and the difference is even greater, often better than YouTube's 4k. By the time youve reached lossless 1440p, its better than YT's 8k, as long as you watch both on good displays at native resolution.
By the time you reach 4k lossless quality, thats it. Only situation where you might need to go even higher is for VR, where it makes sense to go up to 5k due to the increased field of view.
