Garganelli with Ragú alla Salsiccia

We are diving in the tradition of Emilia Romagna, where the ragú is a staple. It is basically a dish on its own, but it is often paired with homemade pasta or in some cases with risotto or polenta. Here we have it with a traditional shape of pasta for the region, called Garganelli.
