Xôi Gấc - Vietnamese Red Sticky Rice Recipe! ✨🌾

❗️if you use frozen gac fruit like I am, be more gentle than I was when mixing it with the rice because I broke some of the grains 😅

Ingredients:

2 cups glutinous rice
1/2 cup Gấc fruit (red aril)
1/2 tsp salt
3 tbsp sugar (divided)
1/3 cup coconut milk
1 tbsp neutral oil (vegetable or canola)
Banana leaves or parchment paper (for serving)
Instructions:

🧺 Soak the rice: Rinse 2 cups of glutinous rice, then soak it in water for at least 4 hours or overnight.

🍈 Prep the fresh Gấc: In a bowl, remove the seeds from 1/2 cup of Gấc fruit, mixing the red flesh with 1/2 tsp salt. Massage it to release the vibrant color. If using frozen gac fruit, you can mix it directly in the rice like I do in the video.

🍚 Mix it up: Drain the soaked rice. Mix the rice with the Gấc mixture, 2 tbsp of sugar, and 1 tbsp of neutral oil, ensuring everything is well coated.

🍲 Steam in two steps:

First steam: Steam the rice for 20 minutes.

Second mix: Remove the rice, then stir in 1/3 cup of coconut milk and 1 more tbsp of sugar.

Final steam: Steam for another 15 minutes until fully cooked and fragrant.

🍃 Serve & enjoy: pack into a bowl or container and then flip it over onto a plate and enjoy!
