I'm thinking if you're making enchiladas, why would you want to use marinara sauce? Dave these look pretty good but if you want them to be enchiladas you should use red enchilada sauce. Or better yet El Pato Salsa de Chilie Fresco mixed with the mild red enchilada sauce. Also add some diced green chilies on top along with the sauce and cheese. Yummy.

Of course I lived in Arizona for many years so my idea of enchiladas may be different than yours.

However, that's one of the nice things about a recipe like this it can be modified to suit anyone's tastes.

That’s is not authentic Mexican enchiladas, but they look good!
