After roasting the bacon, I put it in bread dough with peperoncino.
It is also a dough containing olive oil. (๑•᎑•๑)
Leaf-shaped Fougasse has a large surface area for crust.
The combination of spicy and crispy, salty toppings is the best beer snack!
Only a small amount of peperoncino should be added to the dough!

Mukgling's baking method uses the No Knead method.
Using the minimum tools, seek bread making at home easily.

■ Dough Formulation : 190g
B's(%): 100.0%, Tr(g): 100.0g Strong Flour(Bread Flour)
B's(%): 1.7%, Tr(g): 1.7g salt
B's(%): 0.4%, Tr(g): 0.4g Instant Dry Yeast
B's(%): 6.0%, Tr(g): 6.0g Olive oil(extra virgin)
B's(%): 82.0%, Tr(g): 82.0g Water(10°C)

■ Prepare toppings|Please see video
1. Bacon
2. Peperoncino
3. Black Pepper
4. Parmesan Cheese

■ Process|room temperature: 28.0 ℃

1. Put water in the bowl.
2. Put the instant dry yeast and disperse in water.
3. Add salt and dissolve.
4. Add olive oil and mix well.
5. After adding the flour,
Mix evenly until the flour is invisible (dough temperature: 26°C).
6. After 30 minutes of rest(autolyze), first fold (folding)
   At this time, the prepared bacon, peperoncino and pepper are sprinkled evenly in the dough and folded.

7. After 30 minutes of Rest, the second fold (folding)
8. Fermentation: 1 hour 30 minutes at room temperature
9. Shaping: Please see video
10. Preheat oven.
Oven temperature is raised as high as possible during the Final Proofing to preheat
(my oven maximum temperature 250℃)
Preheat the lodge in a fully-heated oven for at least 20 minutes.
(Lodge LCC3 Cast Iron Combo Cooker, Pre Seasoned, 3.2-Quart)
11. Put the dough into the preheated lodge 10-inch combo cooker floor
12. Cover the lid of lodge 10-inch combo cooker.
13. Put it in the oven
14. After baking for 20 minutes,
remove the lid of lodge and continue baking for 5 minutes.
(total: 25 minutes)

■ Caution: Always be careful when using the oven or lodge combo cooker
(Used after wearing very thick oven gloves because it is very hot)

오늘 해먹어봤는데 짱짱 맛있어요 토핑은 치즈랑 올리브만넣었는데도 넘나맛있는고... 230도가 최대인오븐인데도 가능하네용 꺄 밀가루 다쓸때까지 이거만만들어먹을라구욬ㅋㅋㅋ

안녕하세요 궁금한점이 있습니다! 첫번째 폴딩 30분휴지-두번째폴딩후 1시간 30분 발효-굽기 가 맞나요?! 아니면 첫번째 두번째 폴딩 후 각 30분씩 휴지주고 또 1시간 반 따로 발효하나요..?😊레시피 항상감사합니다

원래 잘. 맛있게. 따라했었는데요. 어느 순간부터 헛갈리기 시작하네요 ㅠㅠ 1차 발효 여쭤볼게요. 폴딩-30분-폴딩-30분 하고 실온 발효 1시간 반 추가하는 건가요? 아니면 전체 1차발효가 1시간 반이라고 하시는 걸까요? ㅠㅠ

이거 맥주안주로 만들었는데. 발효 기다리는 동안 맥주 다 먹버려서 나가서 새로 맥주 사온후 먹었습니다. 굿이에요.

혹시 푸가스는 1차 발효를 짧게 하는 건가요? 이스트량을 보면 오버나이트 하실 것 같은데 스트레이트로 가셔서 여쭤봐요~^^ 내일 푸가스에 맥주 한 잔 해야겠습니다. 스텔라로요..ㅋ
