Almond Oat Cookies
Ingredients:👉
1 cup oats flour
½ cup almonds
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
3 tbsp jaggery powder (or any sweetener of choice)
1 tsp vanilla extract
2 tbsp water
Sliced almonds (for topping)
Instructions:👉
👉Preheated oven at 180°C /350°F.
👉Blend oats in a blender until fine, creating oat flour.
👉In the same blender, add almonds and grind until they release oil and become smooth and creamy.
👉In a medium bowl, mix 1 cup oat flour, baking powder, baking soda, salt, and jaggery powder. Add almond butter and vanilla extract to the dry mixture. Mix well. Gradually add water, mixing until a dough forms.
👉Sprinkle sliced almonds on a flat surface.
Roll dough into small balls, pressing them gently onto the almonds.
Flatten each ball slightly with a spatula.
👉Place cookies on a parchment-lined baking tray.
Bake in a preheated oven at 180°C (350°F) for 20-25 minutes until golden.
Let the cookies cool completely before serving. Enjoy with your favorite tea or coffee!
