Actually the Covenant did continue to battle humanity for a few more months until early 2553. However they didn’t try to invade and glass Earth at that point.

The UNSC should have used wolf pack tactics with their destroyers. Their hailberds were pretty damn good warships despite being unshielded. They had a serious compliment of missiles, and were fairly difficult to detect. In addition their super structure and design made them pretty tough ships. Using packs of destroyers, they could try to pick up individual ships in the covenant fleet. Like a guerilla war.
