i would consider the hiroshima style okonomiyaki, the one you ate, as like a savory layered "cake" and osaka style as a savory "pancake". hiroshima style is made by layering ingredients with yakisoba noodle and a crepe like bottom, while osaka style has a bouncy, chewy thick batter with all the ingredients mixed in instead of layered. (no noodle) the chewy texture comes from the yamaimo or mountain yam which has a gooey texture when grated. but essentially otherwise, its the same. i dont usually add seafood to mine, only pork. oftentimes bonito is layered in so that might add to some of that "seafoody" flavor. i personally love the umami flavor. btw your outfit is adorable
