I made this today. It's freezing here in the Netherlands, and this was just what the doctor ordered. I added some smoked paprika, because I didn't have enough of the regular kind. Maybe a little less coconut milk next time, and I would add lemon to taste. Otherwise it becomes overpowering. Delicious, heartwarming and comforting. I don't know what some of the people are going on about down here in the comments with their negativity.

5 cloves garlic, minced
1 yellow onion, diced
1 leek, chopped
1 sweet potato, large, peeled and diced
5 sun dried tomatoes, chopped
1 tbsp tomato paste
2 tbsp paprika
1 tbsp dried parsley
1 tsp dried thyme
1 tsp salt
5 cups vegetable broth
1 can chickpeas, drained and rinsed
16 oz potato gnocchi, or 1½ cups large pasta shells
1½ cups cashew cream, or coconut milk
½ lemon, juiced, optional
1 handful kale, large, chopped !!

Coconut milk is the best for all kinds of bean soups, but when I run out of it, soy milk is good enough substitute. Not the same but still delicious.
